Light and Fluffy Gluten Free Rolls (keto friendly :-))


1 1/4 cup almond meal/flour

5 tbsp Psyllium Husks

2 tsp baking powder

1 tsp sea salt

2 tsp apple cider vinegar

3 egg whites

1 cup of boiling water


Pre-heat oven to 175° C

Mix together almond meal, psyllium husks and baking powder in a bowl. Add the egg whites, apple cider vinegar and 1 cup of boiling water. Mix/blend for 30 seconds so the mixture resembles play-doh (but don't over mix).

Moisten hands and make 6 pieces of the dough and put on a tray lined with baking paper.

Pop in the oven for around 50 minutes. Rolls are done when tapped on the bottom and they sound 'hollow' :-)

Best to make double the batch and freeze half of them.
