We all need to be eating more green leafy veg as the quality of our soils have drastically depleted our nutrient content in foods. Supplementation can be good but never as good as getting it from it's natural source. Problem is not too many of us are actually eating the required amount. A side salad of iceberg lettuce with a bit of tomato and cucumber will not deliver our daily nutrients..... nor will peas, carrots and beans at dinner.
Smoothies are a great way to get those extra nutrients in but often we use too much fruit as a sweetener to make the smoothie palatable. This smoothie contains no fruit and is just greens and actually tastes quite refreshing. The lemon and mint in this gives it such a refreshing taste. You can experiment with different greens (such as kale) but this one works pretty well for me.
Ingredients
(serves 1)
1/2 cup baby spinach
1 cup cos lettuce
4 tbsp lemon juice
1/2 avocado
1 sprig of mint (including stem)
stevia to taste
1 cup of filtered water
handful of ice
Method
Put in a blender and blend for about 1 minute
